APPLE CRUMBLE

I LOVE  FRUITS!

Fruits are really good for you because they are a natural source of vitamins, minerals and fiber. They contain nutrients that are important for our body  and help with the proper functioning of the digestive tract.  If I could eat fruits all day, I would. Since fruits have fructose in them, having a lot of it would create some health issues, at least long-term. Therefore, as for anything else we eat, moderation is always key. I usually have at least two to three servings of fruit per day.

When I go grocery shopping I always load my shopping basket with a variety of fruit especially if they are running a special. What I cannot use within 3 or 4 days I usually freeze for my smoothies later.

Apples seem to be lasting longer then 4 days, if kept in the refrigerator.

I had 4 apples in my refrigerator and I wanted to use them for baking but never found the time to do it. So today, I decided to just make a quick and easy apple crumble with them. It turned out great and I made it Gluten Free!

Ingredients:

  • 3/4  Stick  of unsalted Butter
  • 4 Apples of your choice (I like Gala)
  • 4 Tbsp Raw Honey
  • 1 Tbsp Coconut Sugar
  • 1 tsp Vanilla Extract
  • 2 drops Lemon Essential Oil
  • Juice of 1 lemon
  • 1/2 tsp Cinnamon
  • 2 Tsp Arrowroot flour
  • 1/2 Cup Sprouted Brown Rice Flour
  • 1/2 tsp salt
  • 1/4 Cup Almond Flour
  • 1/4 Cup Flax Flour
  • 1/4 Coconut Flour
  • 1/2 Cup Chopped Almonds

Start with apples by removing the skin and cutting them in cubes. Add to them the lemon juice, lemon essential oil, 2 tablespoons of honey, vanilla extract and mix well. (if you like cinnamon you can add a pinch) Add the arrowroot flour and mix.

Grease the bottom of a pie pan with coconut oil, pour the apple mixture in it and compact it a little bit.

For the top I start with the butter at room temperature then I add all the flours, the salt, the cinnamon and the remaining honey. Mix lightly so that it looks like crumble. Now add the chopped almonds to it and mix lightly. Poor this on top of the apples in the pan and sprinkle it with 1 tbsp of coconut sugar.

Bake at 350 F for 30 minutes

Enjoy while it is still warm.

BANANA NUT BREAD

BANANA NUT BREAD

What do you do with those bananas when they are too ripe and they do not look so good to eat anymore? Please, do not throw them away! Make Banana Nut Bread instead!

That’s what I did today! And my goodness it turned out so yummy! The aroma that was left inside my house was so inebriating! It was so good my husband didn’t give me time to take a picture of the whole loaf… By the time I got my camera out he had already devoured a slice… 🙂

I used only wholesome ingredients in this bread, that are good for you! This bread is also gluten Free and it includes essential oils of Cinnamon and Wild Orange.

Cinnamon Bark Essential Oil:

  • Supports healthy metabolic function*
  • Maintains a healthy immune system*
  • Has internal health benefits*

Wild Orange Essential Oil:

  • Protects against seasonal and environmental threats*
  • Provides antioxidants, which are essential to overall health*

Ingredients:

  • 4 Tbsp Raw Honey
  • 1/2 Cup Coconut Sugar
  • 1 tsp Vanilla Extract
  • 2 drop Cinnamon Essential Oil
  • 2 drops Wild Orange Essential Oil
  • 1/2 tsp Cinnamon
  • 2 Tbsp Arrowroot flour
  • 1 1/4 Cup Sprouted Brown Rice Flour
  • 1/2 tsp salt
  • 1/2 tsp Baking Soda
  • 1/4 Cup Almond Flour
  • 1/4 Cup Flax Flour
  • 1/4 Coconut Flour
  • 1/4 tsp Turmeric
  • 3/4 Cup Chopped Walnuts
  • 1/4 Cup Almond Milk

Start with the butter at room temperature then add all the wet ingredients. Mix well. You do not need a blender, I usually use a big fork. Add all the dry ingredients and mix well. Add the walnuts last. Grease a loaf pan (I use either butter or coconut oil). Sprinkle 1 tsp of coconut sugar on top and put in the oven.

Bake at 350 F for 1 hour

Gluten Free Brioche BREAD with Essential Oils

Oh my goodness! I made Gluten Free BREAD! I have been working on this recipe for quite some time now and I can finally say, I have done it! I have tried so many different combinations, have had many fails … but in the end this is the one that tastes and looks the best! I am so excited to share this one with you!

And it is not difficult at all, I would say even easier then baking regular bread!

I used Sprouted Brown Rice Flour and eggs, lots of eggs… LOL

So Here it goes:

Ingredients:

Preparation:

In a bowl add the dry Yeast and 1/3 cup of the water at room temperature. Let it sit there for about 20 minutes, just to make sure the yeast is active. After that add the honey.

Turn on your oven and set it to 300 F degrees.

In a separate bowl add all the egg whites including the ones from the two whole eggs and whip them until you have stiff peaks. (I use a hand blender for that)  At this point you can add the arrowroot flour one tablespoon at a time until it is all well incorporated to the egg whites. (I use the same hand blender to do it) Now you should have really stiff peaks!

Go back to the bowl with the yeast and add the rest of the water, the two egg yolks, the salt, the essential oils, the sprouted rice flour and the olive oil. Mix well.

Grease and flour your baking dish. If you prefer you can line it with parchment paper to make sure nothing gets stuck. (If you line your baking dish there is no need to grease and flour it)

At this point slowly add the egg whites mixture to your yeast mixture or vice-versa. Do not use a blender for this as it will cause for all the great hair bubble to dissipate. Just gently fold the two mixture together by adding maybe a cup at a time.

Once it is all combined you are done, just poor the mixture in your baking dish and put in the oven. The mixture will be very runny, do not be afraid, it is supposed to be!

Bake at 300 F degrees for 1 hour.

That’s it! Gluten Free Briosche BREAD! Have a sandwich, toast, or you can freeze the slices for later!

Chocolate Chips Cookies

I love these Chocolate Chips Cookies!

When I make them they are gone in no time. I cannot keep myself or my husband away from them!

I came up with these cookies  that are not only Gluten Free but are made with Raw Cacao Nibs instead of the traditional Chocolate Chips. I know I can indulge myself in one of these cookies anytime I feel the need for that little pick me up or to satisfy my sweet tooth.

The Raw Cacao Nibs taste so good and give them a nice nutty texture. Just give them a try, you will thank me later!

Ingredients:

Start with melting the butter then add all the wet ingredients. Mix well. You do not need a blender, I usually use a big fork. Add all the dry ingredients until the consistency of cookie dough. Add the raw cacao nibs last. Use a teaspoon to drop the dough on your greased cookie sheet (I use either butter or coconut oil).  Shape each cookie by pressing them down with your hands.

Bake at 350 F for 20/25 minutes

About 20 cookies depending on size

SHAMROCK SMOOTHIE

Shamorock Smoothie

In honor of St. Patrick’s day I have created this delicious and refreshing smoothie. It is the perfect complement on those days when you need a little pick me up! The picture doesn’t give it justice when it comes to the color but it really is green. 🙂

 

Shamrock smoothie

Ingredients:

  • 1/2 Frozen Banana
  • 3/4 Cup Frozen diced Mangoes
  • 3/4 Cup Pineapple Juice
  • 1/2 Scoop DoTerra Vanilla Trim Shake
  • 1 Scoop Doterra Terragreens
  • 1 drop Peppermint Essential Oil
  • 2 drops Lime Essential Oil
  • 1/2 tsp maca powder

 

So Good! And good for you!

BLUE TANSY

Simple Tomato Sauce

If you are one of those people that is used to buy already made spaghetti sauce please be aware that making your own is so simple! And you do not have to worry about the ingredients in your tomato sauce because you know what you have put in it! All you do is put all the following ingredients in a pot and cook at low heat for 20 minutes. Serve over your brown rice pasta! Yum!!!

Ingredients:

  • 2 16 oz Cans of Organic Crushed Tomatoes
  • 2 Tbsp of Extra Virgin Olive Oil
  • 2 Cloves of Garlic
  • 1 Tbsp of fresh cut Basil leaves
  • 1 Drop Basil Essential Oil
  • Salt and Pepper to taste

You can store the left over in your refrigerator or freeze it!

Homemade Pesto

Homemade Pesto

I love making my own Pesto sauce! It is really easy to make and it tastes so fresh! So much better then the stuff you buy premade from the store, that to me doesn’t even taste like pesto. Put all ingredients in your food processore and blend for a minute. That’s it!

Ingredients:

  • 1 Cup of Fresh Basil Leaves (Pressed firmly)
  • 1 Cup of Fresh Parsley Leaves (Pressed firmly)
  • 1/2 Cup of Extra Virgin Olive Oil
  • 3 Tbsp of Pumpkin Seeds
  • 2 Cloves of Garlic
  • 1 Drop Basil Essential Oil
  • 2 Drops Lime Essential Oil
  • Salt and Pepper to taste

Homemade PestoI like to use pumpkin seeds instead of the traditional pine nuts. Pumpkin seeds have a lot of nutritional and health benefits associated with them. They are packed with magnesium, manganese, copper, protein, zinc, phytosterols, antioxidants and lots of fiber.

You can store the left over in your refrigerator. Use it to make the traditional Pesto Pasta or add to your sauces as a flavor enhancer!

You can also add a tablespoon or so to your homemade Hummus to create your own Pesto Hummus!

BLUE TANSY

Simple Vinaigrette Dressing

I make my own dressing using Apple Cider Vinegar!
Here is a Basic Vinaigrette recipe for your convenience:

Ingredients:

  • 1 clove of Garlic (minced)
  • 1/2 cup Extra Virgin Olive Oil
  • 3 tbsp Lemon Juice
  • 3 tbsp Apple Cider Vinegar
  • 2 drops Lemon Essential Oil
  • 1 tsp Tahini
  • 1 tsp Honey (optional)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper (I prefer crushed red pepper)

Strawberry & Banana Smoothie

I absolutely love this smoothie! The lime essential oil gives it a burst of flavor, but most of all it is a great internal cleanser*, supports healthy immune function*, positively affects mood with stimulating and refreshing properties and it promotes emotional balance and well-being.

Ingredients:

  • 1 Frozen Banana
  • 1 Cup Frozen Strawberries
  • 3/4 Cup Pineapple Juice
  • 2 Drops Lime Essential Oil

Sit down sip and relax!

Lemonade

Homemade Lemonade

I love lemons, and we have been blessed to have a beautiful lemon tree in our backyard. It produces hundreds of lemons every year! I definitely do not let them go to waste. I squeeze all of them and freeze the juice in zip lock bags, in batches of 1 cup each. When I want to make lemonade I pop one bag out of the freezer, add water and the rest of the ingredients. There you have it, fresh homemade lemonade!

I love to make this dish! I wish to have left overs of this because they are easy to store for later, but I rarely get the chance to have any.

I start making the mini meatballs

In a mixing bowl add the ground bison, ground flax, 2 eggs, parsley flakes, rosemary essential oil, grated clove of garlic, salt and pepper. Mix well.

At this point in a warm frying pan I add the Olive Oil, the chopped onions, celery and carrots. Let it cook until the onions look translucent, then season to taste with salt and pepper. Now, with a melon scoop, form the mini meatballs and drop them in the frying pan making sure they cook on both sides. When the meatballs are cooked add the wine and let it simmer for a few minutes. Add the crashed tomatoes, the coriander essential oil, turmeric, season to taste and let it cook for about 10 minutes on low heat.

Cook the rice and drain the water (you can prepare this ahead of time)

Add the rice to the meatball sauce. Beat the remaining 2 eggs and add them to the mixture, mix well and pour it in a greased (I use olive oil) baking pan.

Bake at 425 F for 25 minutes or until the edges and the top are brown.

  • Salt  & Pepper to taste
  • 1/4 tsp Turmeric
  • 1/2 Cup ground Flax
  • 1lb ground Bison
  • 1 28 oz can of Crushed Tomatos
  • 1 medium Onion
  • 2 stalks of Celery
  • 2 Cups brown rice
  • 1 Cup Carrots
  • 4 Eggs
  • 1 drop Rosemary Essential Oil
  • 1 drop Coriander Essential Oil
  • 1/4 Cup Wine
  • parsley flakes
  • 1 clove of garlic
  • 2 tbsp Extra Virgin Olive Oil

This meatball meal will fill you up!

I use a small squeeze ice cream scoop to shape them and drop them into a  frying pan that has been coated with Extra Virgin Olive Oil.

In a separate frying pan I fry all the veggies  then combine the two into one pan.

At this point add the wine, pesto, honey, crushed tomato sauce and turmeric. Let it simmer for a couple of minutes then add the cooked pasta. Let it cook for another couple minutes and voila’ you are done!

For the Meatballs:

  • 1 lb ground Chicken Breast
  • 1/2 Cup Pumpkin Puree
  • 1/2 Cup Ground Flax
  • 1/4 Cup Brown Rice Flour
  • 2 Eggs
  • 1 drop Rosemary Essential Oil
  • 1 drop Thyme Essential Oil
  • 1 Tbsp Parsley Flakes
  • 1 Grated or minced Garlic Clove
  • Salt and Pepper to taste

 

For the Vegetable medley:

  • 2 Tbsp Extra Virgin Olive Oil
  • 1/4 Cup White Wine
  • 1 tsp Homemade Pesto
  • 2 Cups of Broccoli
  • 1 Onion
  • 3/4 Cup baby carrots
  • 1 Cup Zucchini
  • 1tsp Raw Honey
  • 3/4  Cup Crushed Tomato Sause
  • 1/2 tsp Turmeric powder
  • Salt and Pepper to taste
  • 4 Cups Cooked Brown Rice Pasta

These gluten free muffins are very easy to make! If you are trying to cook with only healthy natural ingredients these are perfect for you. And they taste DELICIOUS!

Ingredients:

  • 3/4 Cup Pumpkin Puree
  • 1/2 Cup of Coconut Oil
  • 2 Eggs
  • 1/2 Cup Honey
  • 1 tsp Vanilla Extract
  • 2 drops Cinnamon Essential Oil
  • 1 tsp Cinnamon
  • 1/2 Cup Flax Flour
  • 1/2 Cup Millet Flour
  • 1/2 Cup Brown Rice Flour
  • 1/2 tsp Ginger
  • 1/4 tsp salt
  • 1/2 tsp Baking Soda
  • 1 Tbsp Tapioca Flour or Arrowroot
  • 1/4 tsp Allspice
  • 1/2 Cup Raw Cacao Nibs

 

Bake at 375 F for 20/25 minutes

Gluten Free and all good for you!

These nut bars are my favorite. I just cannot stay away from them! And they are not only gluten free, but also dairy free and grain free!

I usually have one (or two♥) for breakfast with my morning hot chamomile tea, it is the perfect combination and it will keep me full until lunch!

Replace less healthy snacks, such as chips, with a handful of nuts. Sprinkle them on breakfast cereal and salads. Nuts make a great addition to many of your favorite side dishes and entrees. They will provide you  with  key proteins and nutrients, good fats, antioxidants, and aid in the reduction of cholesterol.

Almonds are highest in calcium of all nuts.  They   are  also high in fiber, vitamin E and magnesium.

Hazelnuts are rich in unsaturated fats, high in magnesium, calcium and vitamins B and E. They  are good for your heart, help reduce the risk of cancer, and aid in muscle, skin, bone, joint and digestive health. 

Walnuts  are high in omega 3 fats, antioxidants. They are good for your heart, can help protect against cancer, and are good for your brain aiding in reducing depression and the risk of age related diseases, such as Alzheimer’s.

The raw cacao nibs are less refined than chocolate liquor or cocoa powder and thus are more nutritionally potent.  Cacao nibs may provide important benefits to your heart and blood vessels, intestinal regularity, and blood sugar level.

Cinnamon Essential Oil  contains strong cleansing and immune support properties.

Lemon Essential Oil not only provides cleansing and digestive benefits but it also enhance the flavor of desserts and main dishes.

Put all the ingredients in your food processor and pulse blend a couple times. Put in a baking pan and push the mixture with your hands or a spoon so that there are no air pockets.
