Oh my goodness! I made Gluten Free BREAD! I have been working on this recipe for quite some time now and I can finally say, I have done it! I have tried so many different combinations, have had many fails … but in the end this is the one that tastes and looks the best! I am so excited to share this one with you!
And it is not difficult at all, I would say even easier then baking regular bread!
I used Sprouted Brown Rice Flour and eggs, lots of eggs… LOL
So Here it goes:
- 1 Cup of Water
- 2 Whole Eggs
- 1 Cup Egg Whites
- 2 Tbsp Raw Honey
- 1 drop Cardamom Essential Oil
- 6 drops Lemon Essential Oil
- 6 drops Wild Orange Essential Oil
- 3 Tbsp Arrowroot flour
- 2 Cups Sprouted Brown Rice Flour
- 1/2 tsp salt
- 1 packet Dry Yeast
- 1 tbsp Extra Virgin Olive Oil
In a bowl add the dry Yeast and 1/3 cup of the water at room temperature. Let it sit there for about 20 minutes, just to make sure the yeast is active. After that add the honey.
Turn on your oven and set it to 300 F degrees.
In a separate bowl add all the egg whites including the ones from the two whole eggs and whip them until you have stiff peaks. (I use a hand blender for that) At this point you can add the arrowroot flour one tablespoon at a time until it is all well incorporated to the egg whites. (I use the same hand blender to do it) Now you should have really stiff peaks!
Go back to the bowl with the yeast and add the rest of the water, the two egg yolks, the salt, the essential oils, the sprouted rice flour and the olive oil. Mix well.
Grease and flour your baking dish. If you prefer you can line it with parchment paper to make sure nothing gets stuck. (If you line your baking dish there is no need to grease and flour it)
At this point slowly add the egg whites mixture to your yeast mixture or vice-versa. Do not use a blender for this as it will cause for all the great hair bubble to dissipate. Just gently fold the two mixture together by adding maybe a cup at a time.
Once it is all combined you are done, just poor the mixture in your baking dish and put in the oven. The mixture will be very runny, do not be afraid, it is supposed to be!
Bake at 300 F degrees for 1 hour.
That’s it! Gluten Free Briosche BREAD! Have a sandwich, toast, or you can freeze the slices for later!
